Kurdai is delicious snack just like papad and fryums. It looks like chakali. Its best use is after frying. On festivals, it is fried like papad and served. Maharashtrian feast is incomplete without accompaniments such as Papad and Kurdai. It is delicious.
It is made from soaked wheat and its milky white extract (Gavhacha cheek) is then cooked with water to make a soft stiff dough called Ukad, which is inturn passed through a press, to get the kurdai. These are then dried and stocked.
The procedure of making is very time taking and difficult. People make typically make them every summer. Very few households now make these authentic Maharshtrian dishes.
